Bernard Delmas runs the estate he took over from his father in 1986, and is working with his wife Marlène and their son Baptiste to manage more than thirty hectares of vines south of Limoux, in a process certified organic by Ecocert. The cool Upper Valley of the Limoux appellation especially favours white grapes—perfect for fine traditional method wines.
