Crémant wines are made by the traditional method of secondary fermentation in the bottle in regions of France outside Champagne (and are also made in Luxembourg) using specified, often local, grape varieties. The regulations for their production are hardly less stringent than those of Champagne, and the wines as a result are a very appealing alternative to their (generally much more expensive) cousin.
