The grapes for Ritme blanc are hand harvested, and selected in the vineyards and again later in the cellar. The pressed juice is cool macerated with the skins for 2 days to gently extract the delicate fuity aromas. The resulting must (juice) is partially fermented and aged in French oak barrels (30%) before being aged on the lees (on the spent yeast cells) for eleven months before bottling.
Priorat is a DO in Spain's Cataluña that is best known for its full-bodied reds, but it does make a little white (and pink!) wine too.
