Fermentation takes place in old French oak barriques, and subsequently stirring of the wine on its lees helps develop texture and weight. The wine matures on its lees for eight months, with no sulphur added until just before bottling.\u003c\/p\u003e\n\u003cp\u003eAromas of herbs, lemon and flowers and a hint of smoke let you know that this is a more complex wine than the vivacious Estate Sauvignon.
