When Claire, Lise and Aline took the reins at the family business of Champagne Baron Albert, the first wine they released was this fruity, sumptuously coloured rosé de saignée.
In the saignée method, the rich pink colour comes from allowing the fruit to rest on its skins for a few hours after pressing. The colour from the skins 'bleeds' into the juice, which is then fermented into a rosé wine, in a technique that needs skilful attention for success. This is much less common in Champagne than blending red and white wines after fermentation (as in the sisters' non-vintage L'Enchanteresse).
