A single vineyard wine whose fruit is divided into two portions, which are treated differently: some of the crop is aged in 30 hl Slovenian oak barrels that condition the texture of the wine rather than imparting any particular oak character; the remainder is aged in smaller French oak casks, before the two wines are blended in stainless steel to give the final Moliss.
This is a fantastic dining wine, with the gentle tannins and lively freshness of Barbera shaping sumptuous cherry and blackberry fruit. There are flashes of blackcurrant and vanilla, and warm, spicy hints linger through the soft finish.
If you like the Pavias 'Blina'—which is unoaked—you should give this a try too. Its flavour profile is a bit broader, perhaps with more of a savoury edge, and it's every bit as versatile with a range of meals from pizza to braised meats and roasts.
