This is a delicate harmony between harvest grapes and reserve wines that have been partially aged in magnums for between five and fifteen years.

Regular price €33.00Laurent Perrachon's light and effervescent Crémant de Bourgogne is a Blanc de Blancs, made exclusively with the juice of white grapes.
From the Perrachon family's Chardonnay vineyards come the grapes for this sparkling wine, produced according to the traditions of the Crémant de Bourgogne appellation. Laurent makes the wine in his own cellars and then entrusts it to an 'elaborator', who takes care of the nine months of second fermentation before the finished wine is ready to be bottled.

Regular price €85.00Champagne Ruinart is the oldest established champagne house, dating back to its foundation by Benedictine monk Thierry Ruinart in 1729, and its wines are particularly renowned for their fresh, mineral Chardonnay influence.
Initial aromas of pear and russet apples expand to include hints of flowers, fresh nuts and a little spice. After a while, notes of brioche and biscuit lend depth to this aromatic intensity.

Marie Demets Cuvée 19ème Siècle, AOC Champagne
Regular price €60.00This was a revelation when we brought it to a staff Christmas dinner a while ago: we hadn't realized just how good it is. Now with deluxe presentation to do the contents justice, this is a first class champagne that recreates the oak-kissed style of an earlier age, and you should absolutely try it.
The twenty-four carat colour promises and delivers luxury all the way through this sumptuous, partly oaked blend of 50% Pinot Noir and 50% Chardonnay from small producer Marie Demets.
Aromatically, this wine is very different from the estate's other champagnes, with a mixed bouquet of heavy-scented peony, lilac and honey: a good preparation for a full-flavoured palate of ripe fruit, hazelnuts and vanilla – almost reminiscent of gingerbread thanks to partial fermentation of half the juice in Burgundian oak.
This is a deluxe champagne that can stand up easily to a special meal, and would make a particularly good match for fish or seafood.

Regular price €225.00Bollinger R(ecently) D(isgorged) is an 'extra brut' champagne, with a very low dosage and a consequent purity and dryness that shows off the exceptional quality of the vintage fruit.
The wine is aged for four times longer than the appellation requires, giving an extraordinary richness and depth to the original fruit flavours, transformed by time and oak ageing into luscious, sweetly spicy harmonies of preserved fruit and golden, concentrated fullness.
Bollinger recommend that this special cuvée be served at an initial temperature as low as 8°C so that all its modulations and subtleties can be appreciated as it warms to the temperature of the room.
The R.D. style recalls the custom among champagne houses of keeping old wines for their own consumption, disgorging them shortly before tasting to yield the perfect combination of absolute freshness with the rich aromatics of a mature wine.

Regular price €67.00Rumour has it that Jean-François Clouet exchanges some of his superlative Pinot Noir fruit for Chardonnay from the Côte des Blancs in order to make the Dream Vintage series of champagnes.
Rumour has it further, that he draws inspiration for the colour of each successive label from the paint finishes of vintage Cadillacs.
What's unquestionably not a tall story is the outstanding deliciousness of this Blanc de Blancs champagne from a maestro of Pinot Noir. Fresh, bready notes and citrus-floral aromas prepare the palate for a beautifully balanced bubbly that displays typical Clouet fullness of flavour but at the same time all the lithe character of a pure Chardonnay champagne.
